Unable to install Ubuntu Desktop Minimal on Fit PC2i

During the disk partitioning I only received the following options as opposed to being able to select the option to use the entire disk
"This is an overview of your currently configured partitions and mount points. Select a partition to modify its settings (file system, mount point, etc.), a free space to create partitions, or a device to initialise its partition table.
Help on Partitioning
Undo changes to partitions
Finish partitioning and write changes to disk"
Please advise why this is occurring.
In addition to that in our test environment we were successful with OS installations on the FitPC2 with Ubuntu minimal and Win XP but on the FitPC2i, the following occurred
Windows loads the prompts to begin installation but immediately stalls about 1 minute into the process. The installation halts leaving a hard power off as the only option.
In the Linux Ubuntu minimal installation it does not allow the user to specify disk partitioning which does with the FitPC2. This step prevents the installation from moving forward as the installation process is awaiting the user to specify the partition.
