Why all the last products are Intel based?

As it happened, for the designs that took place in 2016 / 2017 time frame Compulab chose Intel chips.

You may observe that fitlet1 is based on AMD and fitlet2 is based on Intel.

Compulab has close relationships with both Intel and AMD. We closely evaluate all offerings before deciding on roadmap. There are hundreds of technical and business considerations in deciding about the architecture for a product.

Architecture for future products will be chosen based on the same procedure.

From go-to and best option for fanless AMD mini-pcs, you are just irrelevant any more, as only Intel models available.
