I get into Linux fine but I do not see the ethernet ports on the pci bus.
I am hoping it's a BIOS setting but I can't check the BIOS settings because it does not detect the keyboard I am using for some odd reason (linux detects it just fine).
Any suggestions on either getting the BIOS to detect my keyboard (it's an Adesso WKB-4000US) or activation of the ethernet ports?

Can you post here the output of "lspci"?
The command to enter BIOS is F2 - is this what you have tried?
Do you have another keyboard?

I will purchase a wired USB keyboard since this one being wireless and a combo keyboard/touchpad might be the cause of the complication.
For the ethernet issue: it was corrected after I power cycled (unplugged, plugged) the machine. Very weird. I posted about the issue in a fit-pc2i thread of someone that experienced a similar issues:
