Note: * Opening your FitPC2 to do anything apart from changing the hard disk - will void your warranty * so don't do it.

With that out of the way...
It seems the mini PCIE connector for the WiFi is on the USB, if that is true would it be possible to boot from a device in that slot? Something such as a PCIE SSD.

They are way over priced ATM, so I won't be doing any time soon - but is the theory sound, would it be bootable?

In theory - yes.
In practice, you lose the WiFi. Besides, there are planty of other SSD alternatives to use with the Fit-PC2.

I was thinking more along the lines of integral storage solutions. System / boot or static data on the SSD and a 500GB sata drive(in the normal spot) for group data / variable - that kinda thing.

Just nice to know that it should work I guess.
The more possibilities there are, the greater the market!

BIOS does not support boot from PCIe.

How definite is that?

@madgrt: It sounds as you'd already own a fit-pc2. Did you try to boot from PCIe?
