hello, i'm reading around how to install Jaunty Jackalope and enable GMA500 drivers.
There seems to be some "official" packages on launchpad

deb http://ppa.launchpad.net/ubuntu-mobile/ppa/ubuntu hardy(intrepid or jaunty) main

But there are also instructions on the fitpc2 wiki:

Which is the best way? What are the differences in the two ways?
Will i be able to update the kernel after i do that installation?

You should follow instructions on fit-pc2.com.

The drivers are almost the same but contain some patches that not present on ubuntu-mobile site. Kernel updates will be provided as needed if they are relevant to fitPC2.
