Is this possible to do? Sometimes I'm away from the machine and would like for fit-PC2 to automatically boot up when power is restored.

Yes, it is possible, but you need to order a special configuration that has "AUTO-POWER-ON". This is a change in the motherboard, and you cannot do it yourself at home.
