Hello,
Where can I find the pinout of the mini serial connector (RS232) ?

The Pinout for the RS232 default port in the fitlet2 is as follows:

1 - COM1_TX
2 - COM1_RTS
3 - COM1_RX
4 - COM1_CTS
5 - X
6 - X
7 - X
8 - GND

I believe it is a mini B USB, but is not really sure

Yes, this I've already understood from the doucmentation.
For my I application, I will need to make my own cabling.

Any hints on connector reference are welcome

I lost my cable and can't find where to buy a new one without being crazy expensive.
