Will the uSVR support installing VMware ESXi 5.5 on it?
The product specs page does not mention which type of ethernet chip is used in the device. (Intel, Realtec etc).

uSVR has exactly the same Ethernet controller as Intense PC, actually it has two - please refer to Intense PC specs:
