We use a re-chargeable ML1220 3V 18mAh battery in the fit-pc2.

This behavior including the fact that the fit-pc2 is fairly matured could conclude in an old RTC battery that needs to be replaced.
Try to repeatedly press F2 on startup rather than holding it, you should be able to access the BIOS menu.

Unfortunately this product is fairly matured, and there's very limited information we currently have regarding it. There should be viable information on the AC adapter's sticker, you could also measure it to make sure it supplies the correct voltage. If not, you could assemble the existing connector...
