XP Pro FES (For Embedded Systems) is available until 2016.
You can buy it in min qty of 10 after signing an agreement with Microsoft.
There are a few restrictions, like you are not allowed to install Microsoft Office, otherwise it is just a plain XP pro.

A POE-Injector applies 48 VDC over the Ethernet cable. In the other end you need a POE-splitter that can provide 12 VDC with enough power. Look at this one as an example. If you mean the miniSD card, no, but a regular Compact Flash can be used with a special adapter that makes it look like a 2.5" HD.
