To fix the reboot problem, add reboot=bios to the kernel command line in /etc/grub.conf

I have experience with Fit-PC2s and LTSP 4.2: about the only issue was compiling a kernel module for the r8168.
However, you are probably running LTSP 5 so this won't help you.

CentOS 5.6 WORKS
I have done a successful network install of CentOS 5.6 on a Fit-PC2. The only issue I found was that reboot(5) will not reboot the computer. It just prints a '.' and hangs.
I should also add that I haven't tested sound.
